Well its vacation time for myself and Jimmer.  He is heading to New York City. I am going to Carlsbad beach and fun!  I love the ocean any time of year and this year my vacation falls during my birthday so that is the perfect place to celebrate it!!!!! ..
Enjoy the Best of Jimmer and Karilynn and we will be back on Friday well rested and lots of stories to tell. I miss you already!

RECIPES: Its my Birthday week so I wanted to share a recipe for Lemon squares, one of my favorite things to make for my birthday. There are no diets on your birthday so enjoy! They are easy to make and melt in your mouth!  Yum!

..

Ingredients:

• 2 cups flour
• 1/2 cup confectioners' sugar
• 2 sticks butter
• 2 cups sugar
• 1 tablespoon flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 4 eggs, well beaten
• 1 heaping tablespoon grated lemon rind
• 1/4 cup lemon juice

Preparation:

Sift flour and powdered sugar together. Cut in butter until well blended. Press mixture over bottom of a 9 by 13 by 2-inch pan. Bake about 25 minutes at 300° until lightly browned. Combine remaining ingredients and spread on top of the baked crust. Bake at 350° for 25 to 30 minutes. Sprinkle with powdered sugar.
Makes about 12 servings.

Lap a Thon and fun!
Current mood: happy

 participated in the Lap-A-Thon for the Mojave Aquatic Coalition Saturday and had such a great time!  The Apple Valley Pool was filled with lappers and jog/walkers and for one hour we went back and forth as many laps as we could. I did 48, Mom did 42 and Coleen did 98!!!! This was to raise money for the retractable roof, so we can swim year round and maybe get some Olympic Swimmers from the High Desert. Many thanks to the sponsors, participants, Chili's for the box lunches and the Mojave Aquatic Coalition for all their hard work. I had a blast!

RECIPES: Mangos are in Season and I love them! I saw this recipe in the Daily Press and I had to try it! The source is the National Mango Board. I changed a few things, because I could not find Mexican oregano sio I just used regular oregano. It is very easy and tasty and you can just make the salsa and put it on fish without the taco part, very good as well. I threw all the ingredients in my food processor and it came out really smmoth. I added a small green salad and its yummy and a great summer dinner.

BAJA FISH TACOS WITH MANGO SALSA
4 Servings
MANGO SALSA
2 Large ripe mangoes, peeled, pitted and chopped
1/4 cup minced red bell pepper
1 tblsp lime juice
1tblsp chopped fresh cilantro
2 green onions, sliced (green tops only)
1 small jalapeno pepper, stem, seeds and membrane removed

TACOS
1 pound cod fillets, rinsed and patted dry
1tsp chili powder
1/2 tsp each, ground cumin, Mexican organo and garlic salt
8 corn tortillas, warmed
2 cups shredded green or red cabbage
1/2 cup crumbled cotija cheese(may subsititute shredded Monterey Jack)

Preheat oven to 425 degrees.

Stir together salsa ingredients and set aside.

Place cod on 2 large sheets of parchment paper.  Stir together dry seasonings in small bowl and sprinkle over cod.  Bring edges of parchment papaer together and fold twice.  Fold ends under to enclose fish.  Place packets on baking sheet and bake 15-18 minutes.  Open packets carefully to let steam escape.

Place equal amounts of cod in each tortilla and top with cabbage, cheese and mango salsa

I would add either a fruit bowl, potato salad, or some baked chips! yummy! If you use paper plates,no clean up time! .. ..TR vAlign=top> ..TR vAlign=top> California Wrap Sandwich ..TR class=small_text vAlign=top> ..TABLE>.. --> End Recipe Header -->..TABLE>.. -->concordance-begin--> ..TABLE> 5:28 PM - 0 Comments - 0 Kudos - Add Comment From Food Network Kitchens   Four 10-inch flour tortillas 8 to 12 trimmed leaves of green or red leaf lettuce, washed and dried 12 ounces sliced cooked turkey breast 12 slices apple-wood smoked bacon, cooked 1 vine-ripened tomato, cored and cut into 16 wedges 1 ripe Hass avocado, peeled, pitted and cut into 16 slices tossed with 2 teaspoons lime juice Kosher salt and freshly ground pepper 1 cup arugula or watercress, washed and dried 1/2 recipe Ranch dressing, recipe follows   Wrap tortillas in barely damp, doubled layers of paper towels and microwave on high for 45 to 60 seconds. Alternatively, heat the tortillas individually in an un-greased large skillet over medium heat. Lay the tortillas on a cutting board and start to layer the ingredients. Fan the leaf lettuce on the top three-quarters of each tortilla then lay the turkey slices on top, followed by the bacon, tomato, and avocado. Season with salt and pepper, to taste. Top with the arugula and some of the dressing. Fold up the bottom quarter of the tortilla and then start to roll each sandwich into a cone shape. Secure the tortilla with a toothpick. Serve immediately.   RANCH DRESSING 2 cloves garlic 1/2 teaspoon kosher salt 1 cup prepared or homemade mayonnaise 1/4 to 1/3 cup buttermilk 2 tablespoons minced flat-leaf parsley 2 tablespoons minced fresh chives 1 scallion, thinly sliced 1 teaspoon white wine vinegar Freshly ground black pepper   Mash the garlic and salt to a paste with the side of a chef's knife. In a medium bowl, whisk together the garlic, mayonnaise, 1/4-cup buttermilk, parsley, chives, scallion, vinegar, and pepper to taste. If the sauce is very thick, thin the dressing with a couple more tablespoons of the buttermilk. Use immediately or refrigerate, covered, for up to 3 days. The Williams sisters had to play each other. Venus won! Her fifth Wimbledon win. It was awesome to watch these two sisters play each other, but who do you root for?  I am enjoying the Olympic Trials so much and then Beach Volleyball with Misti May and Kerri Walsh getting ready for Bejing. Congrats to Kyle Busch winning at Daytona. Dang that guy! My Dale Jr is looking good though, Looking Good!
